What You Will Need

Scones
1 ½ cups plain flour
4 tbs. sugar
1 ½ tsp. baking powder
¼ tsp. salt
75g cold butter, chopped
½ cup strawberries, chopped
1/3 cup butter milk
¼ cup champagne
Champagne Drizzle
½ cup champagne
2 tbs champagne
How To Make It
Step One: Preheat oven to 180C and lightly flour a baking tray.
Step Two: Using a hand mixer or bench mixer, mix together flour, baking powder, sugar and salt.
Step Three: On a low speed, mix in the strawberries and butter until just combined.
Step Four: With the mixer on low, slowly add the champagne and buttermilk. Mix until dough forms.
Step Five: Lightly flour bench and using your hand coat the dough into roughly a 20 cm round.
Step Six: Using a 5cm cookie cutter, cut out scone and pop them on the baking tray
Step Seven: Bake scones for 10 mins, until they are lightly golden.
Step Eight: Allow the scones to completely cool pan the baking tray.
Step Nine: For the drizzle, mix together the champagne and icing sugar until smooth.
Step Ten: Drizzle the champagne drizzle over the scones and serve.
