Looking for a ghostly treat this Halloween?

I have made Halloween Marshmallow Ghost Cupcakes. The cupcakes are orange velvet and have a zesty orange flavour with the texture of a red velvet cupcake, which we all know and love. For the ghosts on top, I used marshmallow icing. I know attempting to make marshmallow icing seems scary (Halloween co-incidence??), yet it was incredibly easy and quite fun to make. Go on, be ghoulish and try out these deliciously terrifying cupcakes!

What you Will Need

Orange Velvet Cupcakes

  • ¼ cup softened butter
  • ¾ cup sugar
  • 1 egg
  • ¼ teaspoon orange gel food colouring
  • ½ cup buttermilk
  • 1 ¼ cup plain flour
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 teaspoon orange zest
  • ½ tablespoon white vinegar

Marshmallow Icing

  • 1 cup sugar
  • 2 egg whites
  • Pinch of cream of tartar
  • Pinch of salt
  • Black gel food colouring (for eyes)

How To Make It

Orange Velvet Cupcakes

Step One: Preheat oven to 170 degrees celsius and line 12 cupcake tins with paper cupcake cases.

Step Two: Beat together butter and sugar for 5 mins.

Step Three: Add orange food colouring and egg and beat well.

Step Four: Add buttermilk, flour, salt, vanilla and orange zest and mix well.

Step Five: Fold in vinegar.

Step Six: Add bicarbonate of soda and mix well.

Step Seven: Pour batter into cupcake tins and bake for 18 mins until skewer comes out clean.

Step Eight: Allow cupcakes to cool in tin for 10 mins, then completely cool on wire rack.

Marshmallow Icing

Step One: In a small saucepan combine sugar and water. Bring to boil over medium high heat. Stirring constantly until sugar has dissolved, roughly 2-3 minutes. Remove from heat.

Step Two: In a bench mixer, beat egg whites with cream of tartar and salt until soft peaks form.

Step Three: Put bench mixer on medium and carefully pour the hot syrup into egg whites.

Step Four: Continue beating icing until it is cool and billowy, roughly 5 mins.

Step Five: Pipe icing immediately on to orange velvet cupcakes.

Step Six: Use skewer and black food colouring to draw eyes on marshmallow icing.
