With Halloween being just around the corner I have decided to bake these terrifying (or maybe cute) Halloween Chocolate Mummy Cookies! These cookies are made with delicious chocolate sugar cookie dough, baked into a gingerbread men shape and dressed up with royal icing.
What You Will Need
Cookies
- 113g cold unsalted butter, cubed
- 1 tablespoon canola oil
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 1 large egg
- ¼ cup corn starch
- ½ cup Dutch processed cocoa powder
- 1 ¼ – 2 cups plain flour
Icing
- 1 egg white
- ½ teaspoon lemon juice
- 1 ½ cup icing sugar
- pearl balls to decorate
How To Make it
Cookies
Step One: in an bench mixer, beat together butter, oil, sugar, vanilla and salt until smooth.
Step Two: Add egg and mix until just combined.
Step Three: Mix in cornflour, cocoa powder and 1¼ cups of flour.
Step Four: continue to add flour until ingredients form a dough ball and it move cleanly away from the sides of the bowl.
Step Five: Preheat oven to 180°C and line baking trays with baking paper.
Step Six: Roll out dough between 2 sheets of baking paper until the dough is about 1cm thick.
Step Seven: Cut out shapes and place on the baking trays.
Step Eight: Bake for 9-12 minutes or until cookies look dry on the surface, feel firm around the edges and are set in the centre.
Step Nine: Allow cookies to cool completely on baking trays.
Icing
Step One: Using electric beater whisk egg white and lemon juice together.
Step Two: Gradually add icing sugar and beat until smooth. If icing is too runny to pipe and small amounts of icing sugar until it reaches the right consistency.
Step Three: Decorate cookies to look like mummys using icing and pearl balls.
