Christmas Time is a time of Joy and these Christmas Fruit Mince Pies definitely bring me Joy! If you are struggling to find something to please everyone at the Christmas table this year, here it is! With a delicious fruit mince filling that anyone can mix up and a soft, crumbly, tasty pastry; this recipe will please everyone young and old.

NOTE: this pastry is very delicate, but worth the work.

What you will need

Fruit Mince

  • 500g mixed dried fruit 
  • 1 green apple
  • ½ cup brandy
  • ¼ cup orange marmalade
  • ½ teaspoon mixed spice

Pastry

  • 250g plain flour
  • 85g castor sugar
  • 175g chilled butter
  • 1 ½ teaspoon baking powder
  • 3 teaspoons golden syrup
  • 3 teaspoon milk

Egg Wash

  • 1 egg
  • 2 tbs. milk
  • caster sugar

Step One: Mix together all fruit mince ingredients, cover and refrigerate overnight

Step Two: Mix plain flour, icing sugar together in a bowl.

Step Three: Rub the butter into the dry ingredients until it resembles fine breadcrumbs (you can use a food processor).

Step Four: Alternate adding the milk and maple syrup. Mix until it forms a stiff dough.

Step Five: Mould roughly into a flat disc and refrigerate dough for 20 mins.

Step Six: Preheat oven to 180°C and grease a muffin tin.

Step Seven: Roll out the pastry to 4-5mm thick.

Step Eight: Using a 9.8cm round cookie cutter and a star cookie cutter cut out twelve of each shape.

Step Nine: Gently place the round pastry into the muffin tin.

Step Ten: Spoon in the fruit mince until ¾ full.

Step Eleven: Place star pastry on top of fruit mince.

Step Twelve: Mix together the egg and milk.

Step Thirteen: Brush the egg wash over the pies and sprinkle with some caster sugar.

Step Fourteen: Bake for 15 mins.
