Super Easy Brownie Crackle Cookies

If you love the chewy edges of a brownie and the soft, fudgy centre, these Super Easy Brownie Crackle Cookies are going to win you over.
They’ve got that crinkled top, a rich bittersweet chocolate flavour, and the perfect balance of crisp and gooey.
The dough does need a little time to chill, but it’s worth every minute. The result is a cookie that looks beautiful and tastes even better.
Simple to make, deeply chocolatey, and dangerously moreish. Just how a good cookie should be.
What You Will Need
Ingredients
- 85g butter
- 400g caster sugar
- 125ml vegetable oil
- 4 eggs
- 1 tsp. vanilla extract
- 250g plain flour
- 2 tsp. baking powder
- ½ tsp. salt
- 60g icing sugar
How To Make It
Step One: Mix together the plain flour, baking powder and salt.
Step Two: In a seperate bowl, mix together the cocoa powder, sugar and oil.
Step Three: Mix one egg at a time into the chocolate mix. Mix well.
Step Four: Add the flour mix to the chocolate mix and mix well. This will form a dough.
Step Five: Cover the dough with cling film and pop it into the fridge for at least 4 hours.
Step Six: Pre heat oven to 180C and line a baking tray with baking paper.
Step Seven: Using your hands roll the dough into 2cm balls and dip them in the icing sugar before placing them 2cm apart and the baking tray.
Step Eight: Bake for 10 mins.
Step Nine: Allow cookies to cool completely on wire rack.
Step Ten: Enjoy!
