Sweet Summer Love: Baking for a Sunny February
While the other half of the world is bundling up, we’re right in the thick of a classic Australian summer. February is all about those long, golden afternoons, cooling breezes, and finding any excuse to turn the oven on without melting. Whether you’re prepping for a backyard Galentine’s catch up or looking for the perfect treat to pair with a cold glass of something sparkling, this month’s lineup is designed to keep things bright, fresh, and effortless.
Meet the Crew: The Story of Lola & Teddy 🐾
If you’ve been following along with my baking adventures, you know that my kitchen has two very special supervisors. While I’m busy whisking up treats for the humans, my heart is usually busy keeping up with these two! Today, I wanted to introduce you to the real stars of the show: Lola and Teddy.
The classic Red Velvet Cupcake: A bright red fluffy and moist cake, flavoured with a hint of chocolate and a tang from the buttermilk, topped with delicious cream cheese icing.
Sounds like cupcake HEAVEN, right?!?!? No wonder Red Velvet Cupcakes are so popular.
I have broken down a classic Red Velvet Cupcake Recipe so you too can be eating Red Velvet Cupcakes this Valentine’s Day.
There is something truly magical about the combination of fresh strawberries and a splash of bubbly. These Strawberry Champagne Scones take that classic elegance and turn it into a treat that is perfectly sweet, simple, and surprisingly easy to whip up.
Whether you’re hosting a weekend brunch with the girls or just want to make a Tuesday morning feel a little more special, these scones are the answer.
They have that beautiful, buttery crumble we all love, bursting with juicy berries and a hint of celebration in every bite. Because at the end of the day, baking doesn’t need to be complicated to be delicious.
And let’s be honest, a little bit of champagne makes everything better!
My favourite thing to bake for Christmas is Gingerbread. Gingerbread to me is Christmas.
So to mix it up a little, I have made Mini Gingerbread Cupcakes topped with a gingerbread star of course!
Not only do these little ones look the part, they taste and smell like Christmas. And being bite sized, you can eat more than 1 or 2 at a time. Maybe 5?…
This Strawberry Daiquiri Tart is basically a holiday in dessert form.
Inspired by the classic cocktail, it starts with a buttery, golden Butternut Snap base, then gets filled with the creamiest strawberry filling, spiked with just enough rum and fresh lime juice to give it that signature daiquiri zing.
The final touch? A light sprinkle of mint sugar that makes every bite feel fresh, bright, and a little bit fancy. It’s sweet, tangy, and perfectly balanced. Like sipping a strawberry daiquiri, but with a fork instead.
Whether you’re serving it up at a dinner party, celebrating something special, or just leaning into your dessert-for-fun era, this tart is guaranteed to steal the show.
NOTE: Skip the rum if this tart is for the little ones.
There’s nothing quite like a classic choc chip cookie, and this quick, chunky version might just be my favourite yet.
With a short rest in the fridge before baking, the dough firms up just enough to give you that perfect contrast. These chunky cookies have a golden, crunchy edge with a soft, chewy centre.
The kind of cookie that’s just as good warm from the oven as it is the next day… If they last that long!
If you love the chewy edges of a brownie and the soft, fudgy centre, these Super Easy Brownie Crackle Cookies are going to win you over.
They’ve got that crinkled top, a rich bittersweet chocolate flavour, and the perfect balance of crisp and gooey.
The dough does need a little time to chill, but it’s worth every minute. The result is a cookie that looks beautiful and tastes even better.
Simple to make, deeply chocolatey, and dangerously moreish. Just how a good cookie should be.
Sometimes the simplest bakes really are the best.
This super easy sponge cake is light, fluffy, and comes together with just a handful of ingredients you probably already have at home.
No super complicated steps, just an old-fashioned, reliable recipe that works every time.
It’s the kind of cake you can throw together on a Sunday afternoon, top with whatever fruit’s in season, or enjoy plain with a cup of tea.
Simple, sweet, and always a crowd-pleaser.
There are few things more satisfying than a dessert that feels decadent but barely takes any effort and this four ingredient chocolate tart is exactly that!
Rich, smooth, and with just the right touch of bittersweet chocolate, it’s proof that simple really can be spectacular.
You don’t need any fancy techniques or a long list of ingredients here. Just a few pantry staples and a little chill time.
The result is an elegant tart that’s perfect for impressing guests, spoiling your family, or treating yourself to something extra special without spending hours in the kitchen.
If you’ve been around here for a while, you’ll know I’m a big fan of desserts that look fancy but take almost no effort at all. This panna cotta is exactly that!
Silky smooth, lightly and sweet, this little Italian treat comes together in just minutes with only a handful of ingredients.
The best part? You can make it ahead of time, which makes it perfect for dinner parties, date nights, or when you just want to treat yourself without spending hours in the kitchen.
Today I’m sharing my go-to quick and easy panna cotta recipe that’s foolproof, delicious, and ready to dress up however you like.
Sprinkles really do make everything better! If you’re craving a soft, sweet, and delicious treat with a delightful hint of crunch, this recipe is exactly what you need.
If I had to only make one recipe for the rest of my life it would be this one! A white chocolate biscuit base, a vanilla condensed milk filling and strawberry jelly topped with sprinkles! Whats not to love?

I asked my nephew, Lucas, what recipe he wanted to help me create and boy did he choose a great one!
Rocky Road is a classic, mix it into a cheesecake and It. Is. HEAVEN.
We made a simple rocky road base, topped it with a no bake coconut-raspberry cheesecake filling and dressed it with all the goodies you find in a great rocky road – marshmallows, pistachios, raspberries, chocolate. An of course, added some whipped cream into the mix.
This No bake Rocky Road Cheesecake is a new family favourite and what’s even better is Lucas can make it for me!
