Easter Nests Cupcakes

If you’re looking for the cutest addition to your Easter spread, stop right here. These Easter Nest Cupcakes are a chocolate lover’s dream! Rich cocoa sponges topped with silky frosting and a crunchy, “shredded wheat” chocolate nest. Perched right on top are those iconic mini eggs we all know and love. They’re whimsical, delicious, and (best of all) as much fun to build as they are to eat!

What You Will Need

Cupcakes

  • 4 tbs. boiling water
  • 40g cocoa powder
  • 3 eggs
  • 175g butter, softened
  • 165g castor sugar
  • 115g self-raising flour
  • 1 tsp. baking powder

Icing

  • 60g butter, melted
  • 30g cocoa powder
  • 3 tbs. milk
  • 250g icing sugar

Easter Nests

  • 100g milk chocolate, melted
  • Shredded wheat (I used ½ a pack), crushed
  • Mini eggs

How To Make It

Step One: Pre heat oven to 160°C and line a 12 hole cupcake tin with cupcake liners.

Step Two: Using a handheld mixer/bench mixer, mix together the cocoa powder and boiling water to make a paste.

Step Three: Add the eggs, butter, sugar, flour and baking powder. Mix until smooth.

Step Four: Pour the batter into the cupcake liners and bake for 15 minutes.

Step Five: Allow cupcakes to cool in the pan for 5 mins, then completely cool on a wire rack.

Step Six: To make the nests, lightly grease and rounded bottom patty tin.

Step Seven: Mix together the crushed shredded wheat and melted chocolate. Press the chocolate shredded wheat into the greased patty tin.

Step Eight: Top each nest with 3 mini eggs and pop them in the fridge while you make the icing.

Step Nine: For the icing, mix together the butter and cocoa powder until it makes a paste.

Step Ten: Add 2 tbs. of icing sugar at a time, mixing well between the additions. Use the milk to loosen the mix. Mix until smooth and glossy.

Step Eleven: Pop the icing into a piping bag and pipe the icing onto the cupcakes.

Step Twelve: Pop the easter nests on top to make the ultimate Easter treat.
