Oh boy, have I found an ADORABLE Easter Recipe! 

These Easter Nests look like baby chicks and taste delicious. With a sweet coconut base and zesty lemon and creamy white chocolate filling, you cannot go wrong with these easy Easter Treats.

Whip them up just in time for Easter today!

What You Will Need

For the Base

  • 2 cups shredded coconut
  • ½ cup castor sugar
  • 2 egg whites, lightly whisked

For the Filling

  • 80ml thickened cream
  • 2 strips lemon rind
  • 180g white chocolate
  • Yellow food colouring
  • Black gel food colouring
  • Orange mini M&Ms

How To Make It

Step One: Pre heat oven to 160°C and grease a rounded bottom patty tin.

Step Two: Mix together coconut, sugar and egg whites.

Step Three: Place heaped tablespoons of coconut mix into the patty tin and using wet hands, press into the tin.

Step Four: Bake for 10-12 minutes, until golden.

Step Five: Allow nests to cool in the pan for 5 mins, then completely cool on a wire rack.

Step Six: While nests are cooling, bring to boil cream and rind over MEDIUM-HIGH heat.

Step Seven: Set cream aside to cool for 5 minutes.

Step Eight: Place chocolate in a separate bowl, bring the cream to boil, and then pour cream over chocolate. Discard the rind and stir until chocolate has melted.

Step Nine: Add a few drops of yellow food colouring and set aside to cool and thicken.

Step Ten: Spoon cream mix into coconut nests.

Step Eleven: Using the mini M&Ms and black food colouring, decorate the nests to look like baby chicks.

Step Twelve: Pop in the fridge to set.
