Here’s a super easy sugar cookies recipe. This recipe makes 24 cookies using a 6cm cookie cutter.
I have topped them with store bought fondant. And used food colouring mixed with water to add the colours.
What You Will Need
Cookies
- 450g plain flour
- ½ teaspoon salt
- 230g butter, at room temperature
- 200g sugar
- 1 egg
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
Topping
- Store bought fondant
- Food colouring (optional)
How To Make It
Step One: Place flour, salt and baking powder in a bowl and set to the side.
Step Two: In a separate bowl whisk together egg and vanilla extract.
Step Three: In a bench mixer, beat the butter and sugar until creamy.
Step Four: Slowly add the egg and vanilla mix to bench mixer and mix until well combined.
Step Five: With the bench mixer on low, add flour mix 1/3 at a time. Mix until chunks of cookie dough start to form.
Step Six: Bring dough together in a bowl and knead with hands for 20 seconds.
Step Seven: Cover dough in cling film and pop it in the fridge overnight.
Step Eight: Preheat oven to 160°C and line 2 baking sheets with baking paper.
Step Nine: Split dough into 4 and roll our between 2 sheets of baking paper until 5mm thick.
Step Ten: Using a 6cm cookie cutter, cut out cookie rounds and place on baking sheet.
Step Eleven: Bake cookies for 8 mins or until just golden.
Step Twelve: Let cookie cool on baking tray for 5 minutes then completely cool on wire rack.
Step Thirteen: Colour fondant and roll out to 2mm thick and using the same 6cm cookie cutter cut out rounds. Decorate with whatever you want. I have used a custom cookie stamp, water colours and sprinkles.
Step Fourteen: Using water, stick fondant to cookies.
