Gingerbread Men

It’s December, which means Christmas! There is no easier way to make your home feel and smell like Christmas other than baking Gingerbread Men. This Gingerbread dough is my go to recipe every year. You can use the dough to make gingerbread men, gingerbread women, gingerbread trees, gingerbread houses, gingerbread stars… and the list goes on. 

One of my favourite Christmas memories is when my niece and I made this dough and decorated Gingerbread Families together. I remember we had so much fun and her imagination really made me laugh!

This recipe is easy to whip up and can be frozen for later. Who says you can only eat Gingerbread at Christmas?

What You Will Need

  • 125g butter
  • 2/3 cups brown sugar
  • ¼ cup maple syrup
  • 1 egg
  • 2 ½ cups plain flour
  • ½ tsp. bicarbonate of soda
  • 1 tbs. ground ginger
  • 2 tsp. ground cinnamon
  • 1 cup white chocolate melts
  • sugar pearls 

How To Make It

Step One: Beat butter and sugar until light an fluffy with an electric beater.

Step Two: Add maple syrup and egg. Mix well.

Step Three: Sift flour, bicarbonate of soda, ginger and cinnamon over the butter mix.

Step Four: Using a wooden spoon, mix until just combined and soft dough forms. 

Step Five: Place dough on a lightly floured surface and knead gently until smooth. 

Step Six: Form dough into a disc, cover with cling film and refrigerate for 1 hour or until firm.

Step Seven: Preheat oven to 160°C fan forced and line baking trays with baking paper.

Step Eight: Roll dough out between two sheets of baking paper until 5mm thick. Use a cookies cutter to cut out people shape.

Step Nine: Place cookies 2cm apart on baking tray.

Step Ten: Bake for 20 mins or until just firm.

Step Eleven: Cool on tray for 5 mins then completely cool on wire rack.

Step Twelve: Once cool, DECORATE! I used melted white chocolate and metallic sugar pearls.
