
As we near closer to Christmas, I decided to make these fun Christmas Santa Hat Cupcakes. What better time of the year then to experiment with some crazy baking ideas, right!?!? A delicious white chocolate cupcake topped with a red velvet icing, these cupcakes are definitely a big hit with Santa fans young and old.
If you do make these for little ones I suggest making them into Mini Santa Hat Cupcakes. Just pop the batter into mini muffin tins and bake for 15 mins. To be honest, I personally prefer the icing to cupcake ratio of mini cupcakes!
What you will need
White Chocolate Cupcakes
- 60g butter, softened
- ½ cup sugar
- 1 teaspoon vanilla extract
- 2 egg whites
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 60g white chocolate, melted
- 1 cup plain flour
- ¼ cup Greek yoghurt
Red Velvet Icing
- 225g butter, softened
- 60g cream cheese
- ¼ cup buttermilk
- ¼ teaspoon salt
- 2 ½ teaspoons cocoa powder
- ½ teaspoon vanilla extract
- 4 cups icing sugar
- ¼ teaspoon red gel food colouring
- mini white marshmallows
How to make it
Cupcakes
Step One: Preheat oven to 160°C. Place cupcake liners in cupcake tin.
Step Two: Beat butter and sugar until light and fluffy.
Step Three: Add egg whites and mix well.
Step Four: Add vanilla extract and mix.
Step Five: Add melted white chocolate and mix well.
Step Six: Add salt and baking powder. Mix well.
Step Seven: Slowly add flour making sure to mix well between each addition.
Step Eight: Fold in yoghurt until just combined.
Step Nine: Pour batter into lined cupcake tins.
Step Ten: Bake for 20 mins or until skewer comes out clean.
Step Eleven: Let cupcakes cool in tin for 10 mins then completely cool on wire rack.
Step Twelve: Beat together butter and cream cheese until light and fluffy.
Step Thirteen: Mix together buttermilk and red gel food colouring.
Step Fourteen: Add coloured buttermilk, salt, cocoa and vanilla extract to the butter mixture. Mix well.
Step Fifteen: Slowly add icing sugar with mixer on low. Once all icing sugar is added, mix icing on high speed for 2 mins.
Step Sixteen: Pipe icing onto the cupcakes and pop a mini marshmallow on top.
