The Best Ever Sprinkle-Packed Cookies
Sprinkles Make Everything Better
Original Video Tutorial HERE.
If happiness was a cookie, this would be it! These sprinkle-filled vanilla cookies have a crunchy border and a soft chewy centre, making them a colourfully fun and delicious treat. Honestly, they’re like a little party in every bite—and since I’m a firm believer that you can never have too much joy (or sugar), I usually serve mine with a big scoop of ice cream sandwiched in the middle. Why? Because I can! These are the perfect easy bake for when you want a foolproof treat that looks like it came from a fancy bakery but was actually super chill to make.

The magic of this recipe lies in the cornflour and that crucial chilling time. The cornflour acts as a secret weapon to keep the cookies ultra-soft and “pillowy,” preventing them from getting too tough or crisp. By resting the dough in the fridge for 30 minutes, we allow the butter to firm up and the flavours to meld, ensuring your cookies stay thick and chewy instead of spreading too thin in the oven.
What you will need:
- 230g butter
- 1 2/3 cups sugar
- 2 eggs
- 2 tsp. vanilla extract
- 3 cups plain flour
- 2 tsp. cornflour
- 1 tsp. baking powder
- 1 tsp. Bicarbonate of soda
- 1 tsp. salt
- 3 tbs. sprinkles
- 2 tbs. 100s & 1000s
Em’s Pro Tips:
For that “perfect” round bakery look, use a large round cookie cutter (or even a glass) to gently “scoot” the cookies into a perfect circle the second they come out of the oven while they are still soft!
Change It Up
Want to mix it up? Fold in 1/2 cup of white chocolate chips for a creamy crunch. You can also match your sprinkles to the season, try pastels for Easter or red and green for Christmas!
How to make it:
Cream together the butter and sugar until pale and fluffy.
Add eggs and vanilla, then mix well.
In a separate bowl, mix together the flour, cornflour, baking powder, bicarbonate, and salt.
Gradually add the flour mix to the wet ingredients and combine well until a dough forms.
Fold in your sprinkles and 100s & 1000s.
Place the dough in the fridge to chill for 30 minutes.
Preheat your oven to 180°C (fan forced) and line a baking tray with baking paper.
Roll 2 tablespoons of dough into a ball and place on the tray, spaced 5cm apart.
Bake for 12 minutes until the edges are just starting to golden.
Allow to completely cool on the baking tray to set.
How to store:
Keep these in an airtight container at room temperature for up to 5 days (if they last that long!). You can also freeze the raw dough balls in a zip-lock bag for up to 3 months. Just bake them straight from the freezer and add an extra 1-2 minutes to the timer!
Happy Baking!
